Date Ghosts
Form pitted dates into a little ghost shape.
Melt white chocolate chips (add a touch of coconut oil if needed to thin).
Spoon the white chocolate over each date until coated.
Add two mini chocolate chips for eyes and one mini chocolate chip for the mouth.
Chill in the fridge for about 30 minutes, until the chocolate sets.
Date Cockroach Cookies
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl, mix almond flour, coconut flour, baking powder, salt, maple syrup, vanilla, and almond extract until dough forms.
Scoop about 1.5 Tbsp of dough per cookie and roll into balls. Flatten slightly on the tray, you should get around 12.
Bake for 10–12 minutes, until lightly golden. Let cool completely (they firm up as they cool).
Stuff each pitted date with pistachio butter and press the top gently to close.
Once cookies are cooled, add a drizzle of chocolate to the center for the date to stick and press one stuffed date onto each cookie as the “cockroach body.”
Use melted chocolate to pipe or drizzle small “legs” on each side of the date.
Chill in fridge for 10–15 minutes to set the chocolate.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber.
