Ingredients

  • 1 cup Natural Delights Medjool Dates, pitted
  • 1 cup raw almonds
  • 1/2 cup blueberries
  • 1/4 cup freeze-dried strawberries
  • Tbsp almond butter
  • 1 tsp pure vanilla extract
  • 1 tsp sea salt
  • 1/3 cup unsweetened shredded coconut (for rolling) or white chocolate for dipping

Preparation

  1. Pit your Medjool dates. If your dates are firm, soak them in warm water for about 10 minutes, so they are easier to blend.
  2. In a food processor, combine the pitted dates, almonds, blueberries, freeze-dried strawberries, almond butter, vanilla extract, and sea salt. Pulse until the mixture is well combined and sticky. You want it to hold together when pressed.
  3. Take a small amount (about a tablespoon) and roll it into a ball between your palms.
  4. In a shallow bowl, place the shredded coconut. Roll each bliss ball in the coconut to coat them evenly. Makes about 14-16.
  5. Place the coated bliss balls in the refrigerator for about 30 minutes to firm up. This will help hold their shape!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
