Ingredients

  • 1 cup shredded carrots
  • 1 cucumber, diced
  • ½ cup Natural Delights Medjool dates, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted chickpeas (for crunch)
  • 2 tbsp chopped fresh parsley or cilantro (optional)
  • Mixed greens (like arugula, spinach, or romaine) – about 2 cups
  • For the Hummus Dressing:
  • 1/3 cup hummus (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp maple syrup or honey (optional)
  • 1–2 tbsp water (to thin)
  • Salt & pepper, to taste
  • 1/2 tsp cumin or smoked paprika (optional, for a flavor kick)

Preparation

  1. In a small bowl, whisk together hummus, olive oil, lemon juice, maple syrup, and spices. Add water a little at a time until you reach a pourable consistency. Season with salt and pepper to taste.
  2. In a large bowl, combine all the salad ingredients except the chickpeas. 
  3. Drizzle the hummus dressing over the salad and toss to combine.
  4. Just before serving, sprinkle with roasted chickpeas and seeds for that satisfying crunch.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
