Matcha Protein Balls

Ingredients

  • 1 cup Medjool dates, pitted (around 12-15)
  • ½ cup unsweetened shredded coconut
  • ⅓ cup almond flour
  • 2 scoops vanilla protein powder
  • 2 tablespoons matcha powder
  • ⅓ cup almond butter (or any nut/seed butter you prefer)
  • ½ teaspoon vanilla extract
  • Pinch of Salt

Preparation

  1. In a food processor, pulse the pitted dates and shredded coconut until they form a sticky paste.
  2. Add the rolled oats, protein powder, matcha powder, and salt to the food processor and pulse until well combined.
  3. Add the almond butter and vanilla extract. Process until the mixture comes together and forms a dough-like consistency. You might need to scrape down the sides occasionally.
  4. If the mixture feels too dry, add a tablespoon of water, one tablespoon at a time, until it reaches a moldable consistency. Take a spoonful of the mixture and roll it between your palms to form a compact ball. Repeat with the remaining mixture.
  5. You can coat the balls in additional shredded coconut, matcha powder, chopped nuts, or cacao nibs for extra texture and flavor.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
