No Bake Superfood Brownies

These No-Bake Superfood Brownies are rich, fudgy, and naturally sweetened with Coconut Mini Medjools, walnuts, and peanuts. Topped with an optional fluffy chocolate frosting, they’re a decadent yet wholesome treat packed with superfoods and no oven required!

Ingredients

  • Brownies
  • 2 cups Natural Delights Coconut Mini Medjools
  • 1 ½ cups raw walnuts, plus more for topping
  • 1 cup peanuts
  • ¾ cup cacao powder or unsweetened cocoa powder
  • ½ cup dark chocolate chips
  • Pinch of sea salt
  • Frosting
  • 1 cup unsalted butter, softened to room temperature (vegan as desired)
  • 3-4 cups powdered sugar
  • ¾ unsweetened cocoa powder
  • ¼ - ½ cup milk (vegan as desired)
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Preparation

  1. In a food processor, combine walnuts and almonds. Process until finely ground.
  2. Add cacao powder and sea salt; pulse to combine. Transfer to a bowl and set aside.
  3. Add dates to the food processor and process until small bits remain. Remove and set aside.
  4. Return nut mixture to the food processor. While processing, gradually add date pieces until a sticky dough forms that holds together when squeezed.
  5. Add brownie mixture to a parchment-lined 8x8-inch dish. Incorporate remaining chopped walnuts and chocolate chips, tossing to distribute. Press firmly and evenly into the dish.
  6. Lift brownies out using parchment, gently squeeze sides to create a slightly thicker square. Return to dish and chill in freezer or fridge for 10-15 minutes before cutting into squares. Slice after adding ganache, if desired.
  7. In a mixer, beat softened butter on medium-high for 2-3 minutes until light and fluffy. Scrape bowl.
  8. Gradually add sifted powdered sugar and cocoa powder to butter on low speed, then medium-low, until just combined.
  9. Mix in 1/4 cup milk, vanilla extract, and salt (if using) on medium speed until smooth.
  10. Add more milk, 1 tablespoon at a time, until desired consistency is reached. For thicker frosting, add more powdered sugar; for thinner, add more milk.
  11. Beat on medium-high for 2-3 minutes until extra light and fluffy.
  12. Once the frosting is ready, spread it generously over the brownies.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
