Medjool Date Focaccia Glazed Donut

This Date Focaccia Glazed Donut is sweet and highlights the natural deep caramel flavor from Medjool dates by roasting them as a topping and filling them with a date caramel.

Ingredients

  • Focaccia Dough
  • 4 cups bread flour
  • 500ml warm water
  • 1 tablespoon extra-virgin olive oil
  • 2.25 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • Toppings
  • Extra-virgin olive oil for the bottom of the pan and drizzling
  • Flaky sea salt to finish
  • 25 Medjool dates, pitted
  • 1 cup confectioners’ sugar
  • 1/4 cup + 1 tablespoon milk

Preparation

  1. Whisk together warm water, olive oil, sugar, and instant yeast. Stir in the bread flour and salt until a rough hydrated dough forms. Cover and rest at room temperature for 15 minutes.
  2. Stretch and fold the dough 10 times around the bowl. Cover and rest for 15 minutes.
  3. While the dough rests, pour hot water over the Medjool dates to soften.
  4. Stretch and fold the dough again until a tight ball forms. Cover and proof for 1 hour, or until it doubles in size.
  5. Insert parchment paper into a 9x12 baking dish (use a larger metal tray for a crispier dough and shorter bake time). Drizzle EVOO on the bottom.
  6. Transfer the dough to the sheet. Fold the two sides into the middle and flip the dough over. Proof for another hour.
  7. Preheat the oven to 400F. Chop 5-6 Medjool dates.
  8. Spread the dough to the edges. Drizzle the dough with more EVOO.
  9. Dimple the dough. Add the chopped Medjool dates and flaky sea salt as toppings.
  10. Bake for 30-35 minutes, or until the focaccia is a golden brown.
  11. While the dough bakes, blend the rest of the Medjool dates with 1/4 cup of milk to make a thick caramel. Transfer it to a piping bag.
  12. In another bowl, mix together the confectioners’ sugar and milk to form a glaze.
  13. Take the focaccia out of the oven. Poke deep holes in several locations and fill it with the date caramel. Drizzle the glaze on top. Let it set for 5 minutes.
  14. Slice and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
