Medjool Date Pumpkin Spice Jack O' Lanterns. Perfect for Halloween!


  • 12 Natural Delights® Medjool dates, pitted and roughly chopped
  • 1 cup raw pecans
  • 1/3 cup raw walnuts
  • 1/4 cup old fashioned oats
  • 1/3 cup pumpkin purée
  • 1/2 teaspoon pumpkin spice emulsion (or 1 teaspoon pumpkin spice powder)
  • 1 teaspoon vanilla
  • 1/4 teaspoon sea salt (optional)


  1. Add the dates to the bowl of a food processor and pulse for 15 - 20 seconds. Add the nuts and oats, pulse until just combined, scrapping down the sides of the bowl as you go. Add the remaining ingredients, continue to pulse scraping down the sides of the bowl as you go. When blended, the nuts should be the size of large pebbles of sand. If mixture is too sticky, add more oats.
  2. Turn the mixture onto parchment paper, form into a roll using the parchment paper.
  3. Slice into about 10 pieces.
  4. Roll into balls and form each into a pumpkin shape. Now let's decorate. Fun for kids!
