Nutty Date Bark

Ingredients

  • 1 - 1½ cup Natural Delights Sweet & Salty Almond Mini Medjools (about 20-25)
  • ⅓ cup creamy peanut butter (or your favorite nut butter)
  • ½ cup dark chocolate chips (dairy-free optional)
  • 1 tablespoon coconut oil
  • Flaky sea salt

Preparation

  1. Line an 8x8 inch baking dish with parchment paper.
  2. Place the dates between two sheets of parchment paper. Using a rolling pin, roll the dates out into a flat layer about thick. Aim for a uniform rectangle that covers the entire baking dish.
  3. In a microwave-safe bowl, heat the chocolate chips and coconut oil together in 30-second intervals, stirring in between, until melted and smooth.
  4. Drizzle the melted chocolate over the rolled-out date layer.
  5. Add the creamy peanut butter evenly. Use a knife or skewer to gently swirl the peanut butter into the chocolate, creating a marbled pattern.
  6. Sprinkle the top of the date bark with a pinch of sea salt for a salty-sweet contrast (optional).
  7. Place the baking dish in the freezer for at least 30 minutes, or until the chocolate is completely hardened.
  8. Remove the date bark from the freezer and cut it into squares or bars for serving. Store leftovers in an airtight container.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
