Onion-Bacon Jam with Medjool Dates

This Onion-Bacon Jam with Medjool dates is the perfect sweet and savory addition to your favorite burger.

Ingredients

  • 3 cups diced sweet or yellow onion
  • 1 cup pitted Natural Delights Medjool dates, roughly chopped
  • ½ cup crumbled or chopped bacon, about 4 slices or ⅓ lb
  • 3-4 cloves of garlic, minced
  • 1 ½ tablespoons balsamic vinegar or apple cider vinegar
  • ¼ cup water

Preparation

  1. Peel and chop the onions into a small dice, with pieces similarly sized for even cooking. Set aside, along with the minced garlic and chopped dates.
  2. Heat a large skillet over medium-high heat. Cook the bacon until crispy, about 5-6 minutes. Remove from the skillet and set aside to cool. Drain the excess grease and return the skillet to the stovetop.
  3. Lower the heat to medium then add the onions. Cook for 20-30 minutes, stirring occasionally, until the onions reduce in volume and take on a deep, caramelized color.
  4. Add the minced garlic, chopped dates, and vinegar. Stir to combine, using a spatula or silicone spoon to gently mash the dates into a thick paste.
  5. After about five minutes, roughly chop or crumble the cooked bacon. Stir it into the onion-date mixture along with a small amount of water. Once well-combined with a thick, jammy texture, remove from heat and allow to cool.
  6. Serve as a spread of burgers, sandwiches, savory tarts, and more.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
