Pizza with Caramelized Onions and Dates

Craving a little sweet on your pizza, but pineapple's not your thing?  Try Medjool dates!  They pair beautifully with the tartness of the balsamic vinegar and the spiciness of the arugula.

Ingredients

  • 1 lb pizza dough
  • 1 tbsp avocado oil
  • 1 medium onion, thinly sliced
  • ½ tsp salt
  • 1 tbsp balsamic vinegar
  • ½ cup Medool dates, chopped
  • 6 oz fresh mozzarella
  • 1 cup arugula
  • Fresh basil

Preparation

Preheat oil on a medium pan. Add onions, salt and cook for about 5-8 minutes, stirring occasionally, until onion has started to soften. Add balsamic vinegar and cook for another couple of minutes until the onions are soft and caramelized.

Preheat the oven to 450F. Roll out the pizza dough into a round shape roughly in 13-inches in diameter. Spread the onion mixture over the pizza. Add chopped dates and fresh mozzarella cheese. Bake for 12- 13 minutes until the cheese is melted and the crust is golden brown.

Top the pizza with fresh arugula and basil leaves.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
