Poolside Piña Coladas Naturally Sweetened with Medjool Dates

These Poolside Piña Coladas are a refreshing, tropical-inspired drink naturally sweetened with Natural Delights® Medjool dates instead of refined sugar. Blended with frozen pineapple, banana, creamy coconut milk, and fresh lime juice, this smooth and frosty recipe delivers classic piña colada flavor with wholesome ingredients and natural sweetness. Finished with coconut-covered date garnishes and fresh fruit toppings, it’s a fun, easy drink perfect for warm-weather entertaining or relaxing by the pool.

Ingredients

  • Base
  • 1 cup frozen pineapple
  • 1/2 frozen banana
  • 1/4 to 1/2 cup coconut milk, depending on desired thickness
  • 2 Pitted Natural Delights Medjool dates
  • Handful of ice
  • Squeeze of fresh lime juice
  • Date Garnish
  • Natural Delights Medjool Dates
  • Unsweetened coconut flakes
  • Optional Toppings
  • Kiwi slices
  • Lime slices
  • Jalapeño slices
  • Fresh mint
  • Mini umbrellas

Preparation

  1. Prepare the pineapple by cutting around the top and scooping out the inside, or use a pineapple corer tool to remove the center. Set the pineapple shell aside for serving. Save the pineapple insides for snacking, freezing, or blending into juice later.
  2. Add frozen pineapple, frozen banana, coconut milk, dates, ice, and fresh lime juice to a blender. Blend until smooth and creamy. Adjust coconut milk depending on how thick you want the piña coladas.
  3. To make the date garnish, wet your hands and roll the Medjool dates into small balls. Roll each one in unsweetened coconut flakes, then place onto a cocktail pick or martini skewer.
  4. Pour the piña coladas into the pineapple shell and garnish with the coconut rolled dates plus any desired toppings like kiwi, lime, jalapeño, fresh mint, or mini umbrellas.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
