Ingredients

  • Salad
  • 3 cups napa cabbage, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 2 carrots, shredded
  • 1 cup broccoli, finely chopped
  • 1 cup canned chickpeas, rinsed and drained (optional)
  • 1 large or 2 small mandarins, cut into 1” pieces
  • 3 green onions, finely chopped
  • 1/4 cup mint leaves, finely chopped
  • 6 Natural Delights Pitted Organic Medjool Dates, finely chopped
  • 1/2 cup sliced almonds
  • Orange Ginger Vinaigrette
  • 1/3 cup orange juice
  • 2 tbsp champagne vinegar
  • 1 tbsp fresh ginger, grated
  • 1 tsp Dijon mustard
  • 3 Natural Delights Pitted Organic Medjool Dates
  • 1/2 tsp garlic powder
  • 1/4 cup tahini or olive oil
  • Salt and pepper, to taste

Preparation

  1. Add the ingredients for the salad to a large bowl.
  2. In a blender, combine the ingredients for the dressing and blend until smooth. Adjust for desired sweetness by adding more or less dates.
  3. Drizzle the dressing over the salad and toss right before serving.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
