Date Truffles

No-Bake Medjool Date Truffles with Caramel or Chocolate Sauce

These no-bake Medjool Date Truffles are an easy, naturally sweet treat made with just two main ingredients: Natural Delights Medjool Dates and rich Sunday Night® Caramel or Chocolate Sauce. Soft, chewy, and endlessly customizable, they can be rolled in pistachios, pecans, cocoa powder, coconut, or powdered sugar for the perfect finish. Ideal for quick desserts, snacking, or gifting, these truffles come together in minutes and deliver big flavor with minimal effort.

Ingredients

  • 10 Organic Natural Delights Pitted Medjool dates
  • 3 tablespoons Sunday Night® Caramel or Chocolate Sauce, any variety, room temperature
  • Optional Coatings
  • Chopped pistachios
  • Chopped pecans
  • Unsweetened cocoa powder
  • Powdered Sugar
  • Shredded Coconut

Preparation

  1. Use a large knife to finely chop the dates on a cutting board and scrape into a medium bowl. Add the Sunday Night Sauce and stir until combined.
  2. Use a small cookie scoop to form into balls and place on a sheet pan covered with parchment paper. Use your hands to roll into smooth balls and place back on the parchment paper. Refrigerate for 15 minutes.
  3. Roll the chilled balls into your favorite coatings, such as chopped pistachios, pecans, cocoa powder, powdered sugar or shredded coconut. Serve chilled or at room temperature.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
