Ingredients
- Energy Bite Ingredients:
- 1 cup roasted cashews
- 1 cup Natural Delights Medjool dates (about 8)
- 1/2 cup unsweetened coconut flakes
- 1/2 cup vanilla protein powder of your choice
- 2 tablespoons hemp seeds, chia seeds, or ground flax seed
- 2 tablespoons peanut butter
- 3 tablespoons vanilla almond milk or water
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon
- Optional Truffle Ingredients:
- 1 cup white chocolate chips or melting wafers
- Green & white food coloring
Preparation
Energy Bite Instructions:
In a food processor, blend cashews and dates until mostly broken down until a crumbly consistency.
Add the rest of the ingredients and blend until smooth, about 3 minutes. Put in the fridge for 10 minutes to slightly chill.
Roll into 1-inch bites. Store in the fridge for up to 1 week or freezer for up to 3 months.
Truffle Instructions:
Melt 3/4 cup of the white chocolate in the microwave in 20-second intervals, stirring between each, until smooth.
Stir 1 drop green and 3 drops yellow food coloring into the melted chocolate until you reach a soft tennis-ball green.
Dip each bite into the tinted white chocolate using a fork, letting the excess drip off. Set on parchment paper and chill in the freezer for 5 minutes to set.
Melt the remaining 1/4 cup white chocolate in a separate bowl and transfer to a piping bag (or a zip-top bag with the corner snipped). Pipe two curved laces across each ball to mimic a tennis ball seam.
Let the laces set, then store bites in the fridge for up to 1 week or the freezer for up to 3 months.
