Ingredients

  • Base
  • 2 cups of blended granola
  • 6 hydrated Natural Delights Medjool dates
  • 2tbsp of the same water used for soak the dates
  • Filling
  • 1/2 cup yogurt
  • 1 1/2 cups of cottage cheese
  • 1/2 cup peanut butter
  • 400g Natural Delights Medjool dates
  • 100g almond milk
  • Vanilla extract to taste

Preparation

  1. Soak the dates for the base in hot water for 15 minutes and blend with the granola
  2. Soak the dates for the filling in hot milk for 15 minutes, then blend with the rest of the filling ingredients
  3. Make the crust and place it in a tart/cheesecake pan (6inch), shape it, and add half of the filling
  4. Decorate with melted chocolate
  5. Refrigerate overnight
  6. Freeze the other half of the filling to add to the tart like ice cream

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
