Ingredients

  • Apples and Dates
  • 6 tbsp unsalted butter
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • ½ large apple, thinly sliced
  • 6 Natural Delights Fresh Medjool dates, flattened a bit with a rolling pin
  • Cake
  • ¼ cup milk
  • 1 tsp apple cider vinegar
  • ¾ cup apple sauce
  • ¾ cup plain, unsweetened yogurt
  • ½ cup vegetable oil
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 tbsp ground flaxseed meal
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt

Preparation

  1. Preheat oven to 350F and lightly grease a 9” cake pan.
  2. Make apple and date topping. Combine butter and brown sugar in a small saucepan over medium heat. Whisk until butter has melted. Once mixture has thickened a bit, about 1 minute, remove from heat. Whisk in cinnamon and vanilla. Pour into the prepared cake pan. Arrange the apple and flattened medjool dates on top.
  3. In liquid measuring cup, measure out milk and whisk in vinegar. Set aside for 2 minutes.
  4. In large mixing bowl, whisk together milk mixture, applesauce, yogurt, vegetable oil, sugars, and vanilla. Add flour, flaxseed, baking soda and powder, spices, and salt. Fold dry mixture into wet until smooth batter forms. Bake cake for 45-50 min until toothpick inserted comes out clean (a few moist crumbs is ok!). Cool cake in the pan on a wire cooling rack for 15 minutes.
  5. Invert the slightly cooled cake onto a cake stand. Slice and serve warm with vanilla ice cream.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
