Christmas Tree Date Bark with Medjool Dates & Purple Sweet Potato

This Christmas Tree Date Bark is a playful, eye-catching holiday treat made with a naturally sweet base of Natural Delights® Organic Pitted Medjool Dates. Layered with a vibrant purple white chocolate ganache made from Frieda's Stokes Purple® sweet potatoes and finished with rich chocolate detailing, this festive bark is as fun to make as it is to share. Decorated with crushed candy canes or chopped nuts, it’s a creative alternative to traditional holiday bark with added fiber and plant-based goodness.

Ingredients

  • 15-18 Organic Natural Delights Pitted Medjool dates
  • 1 (~250g raw) @friedasproduce Organic Stokes Purple® Sweet Potato
  • 4oz dairy-free white chocolate chips
  • 8oz dairy-free semi-sweet chocolate chips
  • Crushed candy canes or chopped nuts to decorate

Preparation

  1. Press the Medjool dates into a very flat, thin triangle using a piping bag and the bottom of a jar. Freeze for 1 hour until firm.
  2. Steam the chopped sweet potato until fork-tender (15–20 minutes). Drain, reserving the purple water, then blend with 5–6 tbsp of the water until smooth. Let cool.
  3. Melt the white chocolate and stir in ½ cup sweet potato puree until combined (it will thin). Refrigerate for 1 hour until thick and spreadable.
  4. Remove the date triangle from the piping bag, place on wax paper, and spread a thick layer of the purple white-chocolate mixture on top. Freeze for 30 minutes.
  5. Melt the semi-sweet chocolate and fully coat the purple layer. Pipe a chocolate trunk and star, decorate with crushed candy canes or nuts, then refrigerate until set before cutting or breaking into pieces.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
