Chicken Provençal

Ingredients

  • 6–8 bone-in, skin-on chicken thighs
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon Herbes de Provence
  • 3 tablespoons extra virgin olive oil
  • 8–10 garlic cloves, peeled
  • 2–3 large shallots, peeled and halved
  • 2 cups grape tomatoes
  • 6 pitted Natural Delights Medjool Dates, torn into pieces
  • 1 (14-ounce) can artichoke hearts, quartered
  • 1 cup Castelvetrano olives
  • 1 cup dry white wine

Preparation

  1. Season the chicken with the salt, pepper, and Herbes de Provence.
  2. Heat the olive oil in a large 12-inch skillet or braiser with a lid. Place the chicken skin-side down and cook, undisturbed, for 4–5 minutes, until the skin is golden brown and crispy. Flip and cook for another 3–4 minutes
  3. Add the garlic, shallots, tomatoes, dates, olives, and artichokes around the chicken.
  4. Pour the wine into the pan and bring to a gentle simmer.
  5. Cover with the lid and reduce the heat to low (or just above low). The sauce should remain at a gentle simmer.
  6. Cook, covered, for 45–50 minutes, or until the chicken reaches an internal temperature of 165°F or higher.
  7. Serve over rice and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
