Protein Cookie Dough

Ingredients

  • 1 cup Medjool dates, pitted (about 8 to 10 dates)
  • 1/2 cup protein powder of your choice
  • 1/2 cup oat flour
  • 1/4 cup milk of your choice
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips
  • 1/4 cup add-ins of your choice (more mini chocolate chips, chopped nuts, dried fruit, pumpkin seeds, sprinkles, toasted coconut flakes, cacao nibs, protein crisps, etc.)

Preparation

  1. Microwave Medjool dates for 20 seconds to soften.
  2. Add Medjool dates to a food processor and blend for 10 seconds until mostly broken down.
  3. Then, add protein powder, oat flour, milk, peanut butter, vanilla extract, salt, mini chocolate chips, and add-ins of your choice. Blend on low for about 10-20 seconds until just incorporated.
  4. Chill the food processor bowl in the refrigerator for 30 minutes. Then, scoop out with a cookie scooper, roll into 1-inch balls with your hands, or transfer to a jar to enjoy.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
