Creamy Date & Vanilla Rice Pudding

This flavor-packed dish is sure to satisfy any sweet-tooth craving while using whole ingredients and your homemade touch.

Ingredients

  • 3/4 cup uncooked white rice (short grain or arborio)
  • 2 cups heavy cream, divided
  • 1/3 cup white sugar (at end)
  • 1/2 tsp salt
  • 1 egg, beaten
  • 12 pitted medjool dates, diced
  • 1 Tbsp butter
  • 1 tsp vanilla extract

Preparation

  1. Bring 1 1/2 cups water to a boil in a saucepan then stir the rice into the boiling water. Reduce the heat to low, cover, and allow to simmer for 20 minutes.
  2. In a clean saucepan, combine 1 1/2 cups cooked rice, and half of the heavy cream.
  3. Cook over medium heat until thick and creamy (about 15 to 20 minutes).
  4. Stir in the remaining heavy cream along with the sugar, beaten egg, and dates. Cook for 6 minutes (or until the sugar dissolves), while stirring constantly.
  5. Remove from heat and stir in the butter and vanilla.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
