Salted Date Caramel Overnight Oats with Medjool Dates | Vegan Breakfast

These Salted “Date Caramel” Overnight Oats combine creamy oats, chia seeds, cinnamon, and a naturally sweet date caramel made with Natural Delights Medjool Dates and nut butter. Prepared the night before, this easy grab-and-go breakfast offers the perfect balance of sweet and salty flavors for busy mornings.
Ingredients
- For the "Date Caramel"
- 12 Medjool dates, Pitted & chopped
- Hot Water
- 1 tsp. Sea Salt
- ¾ cup water (reserved)
- ¼ cup Almond Butter/Cashew Butter
- For the Overnight Oats
- 2/3 cup Rolled Oats
- 1 Tbsp. Chia Seeds
- 1 tsp. Vanilla Extract
- ¾ cup. Almond Milk/Plant Alternative
- 1 tsp. Cinnamon
- ½ tsp. Allspice
Preparation
For the "Date Caramel"
1. Combine pitted dates & hot water, and soak for 15 minutes in a food processor to make your "caramel".
2. Drain & blend with salt, water & almond butter. Set aside in jar.
For the Overnight Oats
1. In a separate bowl, mix oats with milk of choice & chill in fridge overnight.
2. When ready, layer oats, then a scoop of “caramel” & repeat.
3. Garnish with fruit, seeds &/or nuts.
