Salted Caramel Overnight Oats

This simple breakfast is a little sweet, and a little salty! Make these Salted Caramel Overnight Oats the night before, so you can eat breakfast on-the-go.


  • 12 Medjool dates, Pitted
  • Hot Water
  • 1 tsp. Sea Salt
  • ¾ cup H2O (reserved)
  • ¼ cup Almond Butter/Cashew Butter
  • 2/3 cup Rolled Oats
  • 1 Tbsp. Chia Seeds
  • 1 tsp. Vanilla Extract
  • ¾ cup. Almond Milk/Plant Alternative
  • 1 tsp. Cinnamon
  • ½ tsp. Allspice


  1. Combine pitted dates & hot water, and soak for 15 minutes in a food processor
  2. Drain & blend with salt, water & almond butter. Set aside in jar.
  3. In a separate bowl, mix oats & chill in fridge overnight.
  4. When ready, Layer oats, then “caramel” & repeat.
  5. Garnish with fruit, seeds &/or nuts.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
