Spiced Date Cupcakes with Cream Cheese Frosting

Don’t you just love a snack that keeps on giving and giving? That’s what Natural Delights Medjool Dates are, a fresh and whole fruit that I can incorporate into tons of dishes or just enjoy on their own! Recipe by Sugar Love Chic.

Ingredients

  • Cupcake ingredients:
  • 1 cup chopped Natural Delights Medjool Dates
  • 1 3/4 cups all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 1 large egg, room temperature
  • 1 1/2 tsp vanilla
  • 2 cups whole milk
  • Frosting:
  • 1/2 cup unsalted butter, softened
  • 1 8oz package of cream cheese, softened
  • 1 tsp of vanilla
  • 3 cups powdered sugar

Preparation

Cupcake directions

1. Preheat oven to 350°.

2. In a large bowl, mix butter and sugar until fluffy, then beat in egg. Mix in chopped Medjool Dates.

3. In a separate bowl, whisk together flour, baking powder, salt, baking soda and all of the spices. Then gradually add this to creamed mixture.

4. Fill lined muffin pan cups three-fourths full and bake for 20-25 minutes.

Frosting Directions

1. Combine butter and cream cheese in a bowl and beat until creamy and lump-free.

2. Add in vanilla extract.

3. With mixer on low, gradually add powdered sugar until completely combined.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
