Toasted Coconut Date Breakfast Bars

Take your on-the-go breakfast regimen to the next level with these wholesome, 5 ingredient breakfast bars that come together the night before in only 15 minutes.


  • 1 ¼ cups Natural Delights Coconut Mini Medjools ®
  • 2 cups Unsweetened Toasted Coconut Flakes, plus more for topping
  • 1/4 cup almond butter
  • 1/2 cup dark chocolate chopped
  • 1 tsp coconut oil


  1. Place the Natural Delights Coconut Mini Medjools ® into a food processor and pulse until broken up into smaller pieces.
  2. Add in the coconut and almond butter and then continue blending until combined. Try not to over blend or you will release some of the oils in the almond butter.
  3. Prepare a 6×6 inch pan with parchment paper and press the mixture evenly into the bottom. Cover and chill for 1 hour.
  4. Melt the chocolate and coconut oil together in a microwave safe bowl, cooking in 15 second increments and stirring between each until smooth.
  5. Cut the mixture into bars (6) and dip the bottom half into the chocolate. Place the chocolate dipped bar onto a tray lined with parchment paper. Repeat until you have dipped each bar.
  6. Drizzle the remaining chocolate over the top of the bars and top with more toasted coconut flakes.
  7. Chill until the chocolate is solid and then serve.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
