Truffle Date Boats

YIELD: 6 servings

A sweet heady blend of goat cheese, clover honey, and white truffle oil are piped into halved dates.



Ingredients

  • 4 oz cream cheese
  • 10 oz goat cheese
  • Pinch of ground pepper
  • 4 oz honey
  • Pinch of sea salt
  • 3/4 tbsp white truffle oil
  • 12 Medjool dates
  • Parsley, for garnishing

Preparation

  1. Split the dates completely in half, and wearing a food handler’s glove, gently press a thumb into the pit opening to expand the cavity for filling. Set aside.
  2. In a small stand mixer, with the paddle, beat the remaining ingredients on medium for one minute or until well combined and creamy.
  3. Using a rubber spatula, scrape down the paddle and the sides of the bowl to consolidate.
  4. Using a pastry bag, fill each date in a spiral motion.
  5. Serve on a chilled platter and enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
