Date and Goat Cheese Bruschetta

Ingredients

  • 1 baguette
  • 4 oz goat cheese, softened
  • ½ cup pitted Medjool dates, roughly chopped
  • ¼ cup unsalted pistachios, roughly crushed
  • Extra virgin olive oil
  • Salt and freshly ground black pepper

Preparation

  1. Preheat your oven to 350°F (175°C). Slice the baguette diagonally into ½ inch thick slices. Arrange the bread slices on a baking sheet and brush lightly with olive oil. Bake for 10-15 minutes, or until golden brown and toasted.
  2. While the bread toasts, roughly chop the dates and pistachios.
  3. Once toasted, remove the bread slices from the oven and let cool slightly.
  4. Spread a generous amount of goat cheese on each toasted bread slice.
  5. Top the goat cheese with chopped dates and sprinkle with crushed pistachios.
  6. Drizzle with a touch of olive oil and season with salt and pepper to taste.
  7. Serve immediately.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
