Medjool Date Peanut Butter Cookies

These aren't your traditional peanut butter cookies! Thanks to Medjool dates, this sugar-free recipe is even more share-worthy.

Ingredients

  • For Cookies
  • 1 cup Peanut or Almond Butter
  • 1 ½ cups Medjool Dates, pitted
  • 2 teaspoons Vanilla
  • 1 extra large Egg
  • 1 teaspoon Salt
  • For Topping
  • 8 oz. Chocolate, melted
  • Peanuts or Almonds, chopped for topping

Preparation

  1. In a food processor blend together the nut butter and dates until dates are finely chopped using lots of pulses and scraping down the sides of the bowl.
  2. Add the rest of the ingredients blending well.
  3. Turn dough onto a work surface and roll into 2-3 inch balls. Can be refrigerated up to three days before baking.
  4. To bake preheat oven to 350 degrees.
  5. Place balls about 3 inches apart on lined cookie sheet. Press a plus sign with a fork on top of balls to flatten.
  6. Bake for 8-10 minutes. Do not over bake. Let cookies cool before applying chocolate.
  7. Drizzle or dip halfway with melted chocolate, sprinkle with nuts.

Store in airtight container for up to two weeks.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
