Date Seed Coffee (Naturally Caffeine-Free Coffee Alternative)

Date Seed Coffee is a warm, comforting, caffeine-free alternative made from roasted Medjool date seeds. Once roasted and finely ground, the seeds brew into a rich, coffee-like drink with subtle nutty notes and natural depth. Finished with whole milk and a touch of cinnamon, this cozy beverage is a simple, creative way to reduce waste while enjoying a soothing cup that fits perfectly into a mindful daily routine.

Ingredients

  • 15-20 date seeds (de-pitted from center of 15-20 Medjool dates)
  • 1/2 cup whole milk
  • 2 tbsp cinnamon

Preparation

  1. Preheat oven to 400F
  2. Start by de-pitting Medjool dates
  3. Lay date seeds onto baking sheet (you may need to run them under water and strain any excess dates off of the seeds)
  4. Roast date seeds on 400F for 7-10 minutes until they are darkened
  5. Blend date seeds in a high speed blender for ~30 seconds (until they appear like coffee grounds)
  6. Add the ground date seeds into coffee machine & prepare a cup of coffee as you would normally
  7. Pour the prepared coffee into a mug with some whole milk & cinnamon (optional for extra warmth & comfort)

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
