Smores Balls

You can enjoy the taste of being around a campfire any time with these delicious Smores Balls! These delicious bites are made with Medjool dates for a naturally sweet snack.

Ingredients

  • 1 12oz Package of Natural Delights Pitted Medjool Dates
  • 3-4 Tbsp. Heavy Cream, divided
  • 1 Tbsp. Cocoa Powder
  • Pinch of Salt
  • ¼ Cup Mini Marshmallows
  • ½ Cup Graham Cracker Crumbs

Preparation

  1. If your dates aren’t super fresh and soft, you can add them to a small bowl with some boiling water to cover the dates and allow to sit before draining water and adding to food processor.
  2. Add the dates, cocoa powder and salt to a food processor, with 2 Tbsp. of cream.
  3. Process and add 2 additional Tbsp. of cream as needed until a creamy but thick consistency is achieved.
  4. Place your graham cracker crumbs into a shallow plate.
  5. Scoop the mixture using a spoon (about 1 ½ Tbsp.) and loosely form a ball on the spoon, stuff in 2-3 three mini marshmallows (more if you like) and drop the date ball into the graham crackers and roll around until fully coated.
  6. We like to keep a bowl of warm water and a tea towel close by so we can wash our fingers quickly as we're going.
  7. Continue until you’ve made 12 Smores balls, placing them onto a baking sheet lined with parchment paper that you can fit into your fridge to set.
  8. Allow to set for roughly 20 mins or until more firm to the touch.
  9. Store in an air tight container in the fridge to enjoy throughout the week!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
