Tahini Cookies

These vegan Tahini Cookies are sweet and smooth. The Medjool dates add a sweetness you don't have to feel guilty about.


  • ½ cup Salted Butter, Room Temperature (vegan)
  • ½ cup Smooth Tahini
  • 1 cup Monk Fruit Sugar
  • 2 tsp. Vanilla Extract
  • 1 cup Gluten Free Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Sea Salt
  • ¼ cup Flax/Plant Milk Alternative
  • 1 cup Chopped Medjool Dates
  • ½ cup Chocolate Chunks


  1. Preheat 350F.
  2. Cream butter & tahini together.
  3. Add vanilla & milk, mix.
  4. Whisk dry ingredients & mix with wet.
  5. Fold in dates & chocolate.
  6. Scoop into balls then bake 12-15 minutes, enjoy.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
