Tahini Pistachio Bars

 No-Bake Chocolate Pistachio Date Bars | Easy & Naturally Sweet Ramadan Treat

Soft, naturally sweet, and packed with Medjool dates, chia seeds, and pistachios, each bar is coated in rich chocolate for the perfect indulgent yet wholesome treat. Ingredients

  • 2 cups of pitted Medjool Dates (about 10-15 pieces)
  • 1tbsp chia seeds
  • 1tsp honey
  • 1tbsp pistachio butter
  • 1tsp tahini
  • ¾ cup of unshelled pistachios
  • 1tbsp cocoa powder
  • 1tsp coconut oil
  • 8oz dark or milk chocolate
  • Pinch of sea salt

Preparation

  1. Line an 8x8-inch pan with parchment paper, leaving an overhang for easy removal.
  2. Add the pitted Medjool dates, honey, pistachios, pistachio butter, chia seeds, tahini, and cocoa powder to a blender or food processor. Blend until a thick, smooth paste forms. The mixture should be sticky and hold together when pressed.
  3. Transfer the date mixture into the lined pan. Press firmly into an even layer using the back of a spoon or lightly greased hands.
  4. Melt the chocolate with the coconut oil until smooth (microwave in 20–30 second intervals, stirring between each).
  5. Pour the melted chocolate over the date layer and spread evenly. Sprinkle with chopped pistachios and a pinch of flaky sea salt, if desired.
  6. Refrigerate for at least 1 hour, or until the chocolate is fully set.
  7. Lift from the pan using the parchment overhang and slice into bars or squares.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
