Make the Carrot Juice
Blend carrots with water until completely smooth.
Strain through a fine sieve or nut milk bag, pressing well, into a large bowl or jug.
Set aside.
Make the Date Cream
Blend the Medjool dates, heavy cream, and sweetened condensed milk until completely smooth and creamy. Set aside 2 tablespoons of date cream.
Prepare the Punch
In the blender with the date cream, combine carrot juice, sweetened condensed milk, vanilla, spices, and salt.
Whisk or blend until smooth. Adjust for flavor and sweetness. Strain into a pitcher.
Refrigerate for at least 2–3 hours to chill and let flavors develop.
Make the Cream Cheese Whipped Cream
In a bowl, beat softened cream cheese until completely smooth. Add cream, the reserved 2 tablespoons of date cream, sweetened condensed milk, milk, vanilla extract, and a pinch of salt and beat until smooth, silky, and soft to medium peaks form.
To Serve
Stir the chilled punch well
Pour over ice into glasses
Top with cream cheese whipped cream
Garnish ideas
Light dusting of cinnamon or nutmeg
Crushed pecans or walnuts
