 Carrot Cake Punch with Cream Cheese Whipped Cream  

This Carrot Cake Punch transforms classic dessert flavors into a creamy, spiced drink made with real, nourishing ingredients. Fresh carrot juice is blended with a naturally sweet date cream made from Natural Delights® Medjool dates, creating a smooth, caramel-like base with warm chai spices and vanilla. Finished with a light, fluffy cream cheese whipped topping, this unique beverage delivers all the cozy flavor of carrot cake in a refreshing, sippable form—perfect for gatherings or an elevated treat.

Ingredients

  • Carrot Juice Base
  • 400 g carrots, peeled and sliced into chunks
  • 2-2.5 cups cold water
  • Natural Delights Date Cream
  • 6–8 Natural Delights Medjool dates, pitted
  • ½ cup warm cream or coconut milk
  • 1/4 cup sweetened condensed milk
  • Punch
  • Fresh carrot juice (strained)
  • Date cream (reserve 2 tablespoons)
  • 1 tsp vanilla extract
  • 1 teaspoon chai spice
  • Pinch of salt
  • Cream Cheese Whipped Cream
  • 1 oz cream cheese, very soft
  • 1/3 cup heavy whipping cream, cold
  • 1-2 tablespoon date cream
  • 2 tablespoons sweetened condensed milk
  • 1-2 tablespoon(s) milk
  • ½ tsp vanilla extract
  • Pinch of salt

Preparation

Make the Carrot Juice

Blend carrots with water until completely smooth.

Strain through a fine sieve or nut milk bag, pressing well, into a large bowl or jug.

Set aside.

Make the Date Cream

Blend the Medjool dates, heavy cream, and sweetened condensed milk until completely smooth and creamy. Set aside 2 tablespoons of date cream.

Prepare the Punch

In the blender with the date cream, combine carrot juice, sweetened condensed milk, vanilla, spices, and salt.

Whisk or blend until smooth. Adjust for flavor and sweetness. Strain into a pitcher.

Refrigerate for at least 2–3 hours to chill and let flavors develop.

Make the Cream Cheese Whipped Cream

In a bowl, beat softened cream cheese until completely smooth. Add cream, the reserved 2 tablespoons of date cream, sweetened condensed milk, milk, vanilla extract, and a pinch of salt and beat until smooth, silky, and soft to medium peaks form.

To Serve

Stir the chilled punch well

Pour over ice into glasses

Top with cream cheese whipped cream

Notes

Adjust sweetness based on your dates and preference

The punch will settle as it sits—just stir before serving

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
