Ingredients

  • Pink Layer
  • 1 cup Edward and Sons coconut milk
  • ½ cup frozen banana coins
  • 1 organic cooked beet
  • 2 Natural Delights Medjool dates
  • 1 tsp cinnamon
  • Pinch of salt
  • Green Layer
  • 1 cup spinach
  • ½ cup Edward and Sons coconut milk
  • Lots of ice
  • Coconut Cloud
  • Frothy Edward and Sons coconut cream
  • Optional to froth with a dash of vanilla and cinnamon

Preparation

Make the pink layer

Add the coconut milk, frozen banana, cooked beet, Medjool dates, cinnamon, and a pinch of salt to a blender. Blend until completely smooth and creamy. Set aside.

Make the green layer

Rinse the blender, then add spinach, coconut milk, and ice. Blend until smooth and vibrant green.

Prepare the coconut cloud

Froth the coconut cream until light and airy. If desired, add a dash of vanilla and cinnamon while frothing for extra flavor.

Assemble the smoothie

Pour the pink layer into a glass, then gently add the green layer on top for a layered effect.

Finish and serve

Top with the coconut cloud and enjoy immediately.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
