Date Caramel Apple Galette

This Date Caramel Apple Galette combines flaky pastry, tender apples, and homemade date caramel for a naturally sweet twist on a classic fall dessert. Made with Medjool dates, vanilla, and sea salt, the rich date caramel pairs perfectly with warm, cinnamon-free apple filling.

Ingredients

  • Date caramel
  • 8 Natural Delights Medjool dates, pitted
  • ⅓ cup hot water + more if needed
  • 1 teaspoon vanilla extract
  • ½ tsp sea salt
  • Apple galette
  • 1 pie crust
  • 2-3 tbsp date caramel + extra
  • 4 apples, sliced into ¼ inch slices
  • 2 medjool dates, cut lengthwise
  • 1 egg, whisked for an egg wash

Preparation

Date caramel

Soak dates in ⅓ cup hot water, for about 10 minutes. Then, place in a blender with vanilla, salt and blend until smooth. Add more water if needed.

Apple galette

Preheat the oven to 400F.

Roll the dough into a 12 inch circle. Spread 2-3 tbsp of date caramel leaving 2 inch border all around.

Arrange sliced apples on top and lightly brush with date caramel.

Gently fold the edges of the dough over the filling, overlapping the dough as necessary.

Brush the crust edges with egg wash and sprinkle the crust and apples with coconut or coarse sugar.

Bake until the crust is golden brown, about 35 minutes. Remove from the oven and allow to cool before slicing.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
