Curried Chicken Salad with Medjool Dates | Easy High-Protein Lunch Recipe

Ingredients

  • 2 cups cooked chicken breast or rotisserie chicken, chopped
  • ¼ cup red onion, minced
  • ¼ cup celery, minced
  • ⅓ cup Natural Delights Organic pitted Medjool dates, chopped
  • 2 TBSP parsley, chopped
  • ⅓ cup walnuts, lightly toasted, chopped
  • 1 TBSP curry powder
  • Salt & pepper to taste
  • ¼ cup plain Greek yogurt
  • ¼ cup mayonnaise

Preparation

  1. Prep all ingredients: chop chicken, mince red onion and celery, chop Medjool dates and parsley, toast and chop walnuts, measure out curry powder, Greek yogurt, and mayonnaise.
  2. Add all ingredients to a large bowl. Gently toss until well combined. Enjoy!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
