Ingredients

  • Base
  • 12 Natural Delights Medjool dates, 1 cup packed, pitted
  • 1 cup hot milk
  • 2 large room temperature eggs
  • ½ cup melted butter, cooled slightly
  • 1 ¼ cup all-purpose flour
  • ½ cup coconut sugar
  • 1/2 teaspoon of baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pumpkin swirl
  • 4 oz cream cheese, softened
  • 2 tbsp pumpkin puree
  • 2-3 tbsp maple syrup
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 tsp pumpkin spice

Preparation

Preheat the oven to 350F degrees and line the 8x8 baking pan with parchment paper.

Place pitted dates in a bowl, pour over hot milk and let it soak for about 10-15 minutes. Blend in a blender until paste. Then, add eggs and melted butter. Blend until smooth.

In a separate bowl mix flour, coconut sugar, baking soda and cinnamon.

Pour date mixture over dry ingredients and add vanilla. Mix until just combined.

Meanwhile, make the pumpkin cheesecake. Combine cream cheese, pumpkin puree, maple syrup, egg, vanilla and pumpkin spice. Mix using a mixer until smooth batter forms.

Pour 2/3 of the date cake batter into the prepared baking dish.

Dollop the pumpkin cheesecake in 4-6 spots on top and dollop remaining date batter in between. Use a butter knife to swirl the mixture into the batter by dragging the knife from one side to the other of the pan until the swirl has been created.

Transfer to the oven and bake at 350F for 30-35 minutes
