Medjool Date, Blueberry and Lemon Endurance Energy Balls
YIELD: 10-12 energy balls

Quick to make, these fruit flavored Medjool Date balls are an energizing snack for times when you need extra endurance.

Ingredients

  • 10 Natural Delights® Medjool Dates, pitted and chopped
  • 1 1/2 cups raw cashews
  • ½ cup shredded coconut
  • 1/2 cup dried blueberries
  • 1 Tbsp hemp seeds (or flax seeds)
  • 1 Tbsp chia seeds
  • 2 Tbsp fresh lemon juice
  • 1 tsp. lemon zest
  • ½ tsp. vanilla extract
  • Pinch of salt (optional)

Preparation

  1. Add all ingredients to the bowl of a food processor, process using the pulse tab, scraping down the sides as needed. Add a little more lemon juice if mixture is too dry. Mixture should look like coarse sand.
  2. Turn mixture out onto parchment paper.
  3. Form one 10 inch roll using paper to cover mixture to prevent the mixture from sticking to your hands.
  4. Slice roll into 10-12 pieces.
  5. Shape each slice into a ball.
  6. Roll each ball in coconut (optional).
  7. Store in an airtight container.

Keeps in pantry for 2-3 weeks or refrigerate for longer storage.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
