 No-Bake Mint Chocolate Chip Pie with Medjool Date Cocoa Crust 

This No-Bake Mint Chocolate Chip Pie is a fresh, creamy dessert layered with rich chocolate and cool mint flavor. It starts with a simple cocoa crust made from nuts, hemp seeds, and naturally sweet Organic Medjool dates from Natural Delights®. A silky chocolate ganache layer sits beneath a fluffy dairy-free mint filling studded with chocolate chips, creating the perfect balance of creamy, chocolatey, and refreshing in every slice. Easy to prepare and completely no-bake, it’s a festive dessert for celebrations, holidays, or whenever mint and chocolate cravings strike.

Ingredients

  • Crust
  • 1 cup (120g) pecans or walnuts
  • 1 cup (120g) hemp seeds
  • 1/4 cup (25g) cocoa powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup Natural Delights Organic Medjool dates, pitted
  • Ganache
  • 4oz semi-sweet chocolate chips
  • 1/2 cup (120g) full-fat coconut milk
  • Mint Filling
  • 8oz dairy-free cream cheese, room temperature
  • 1/2 cup (60g) powdered sugar
  • 13.5oz can coconut cream (scoop out just the solid part after chilling 24 hours)
  • 1/2 teaspoon vanilla extract
  • 1 tsp peppermint extract
  • 1/4 tsp spirulina powder + 1/4 tsp matcha powder (or 3-4 drops green food coloring)
  • 4oz (~3/4 cup) chopped dark chocolate or mini chocolate chips

Preparation

Crust

For the crust, lightly grease a 9” pie pan. In a food processor, combine the nuts, hemp seeds, cocoa powder, and salt. Process to fine crumbs. Add the Medjool Dates and process again to form a sticky clumpy mixture. Press firmly into the pie pan, covering the bottom and sides. Set aside.

Ganache

For the ganache, microwave the coconut milk for one minute. Pour over the chocolate chips, and cover with foil for three minutes. Stir until smooth. Spread into the bottom of the crust, and refrigerate while you prepare the filling.

Mint Filling

For the filling, combine everything except for the chocolate chips. Use a hand mixer to whip until light, fluffy, and smooth. Fold in the chocolate chips. Spread into the pie pan on top of the ganache. Refrigerate overnight.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
