Spooky Medjool Date Spider Bites

YIELD: 12 balls

Dust off the cobwebs and uncover spooky Medjool Date Spider Bites filled with nutty, chocolate flavor.

  • 16 Natural Delights® Medjool dates, pitted and roughly chopped
  • 1 cup raw almonds
  • 1/2 cup unsweetened desiccated coconut (+ 1/2 cup more for coating the date balls)
  • 1/3 cup cashew butter (or your favorite nut butter)
  • 3 tablespoons cacao powder
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt (optional)

  1. Add the dates to the bowl of a food processor and pulse for 15 - 20 seconds. Add the nuts and pulse until just combined, scrapping down the sides of the bowl as you go. Add the remaining ingredients, continue to pulse scraping down the sides of the bowl as you go. When blended, the nuts should be the size of large pebbles of sand.
  2. Turn the mixture onto parchment paper, form into a roll using the parchment paper.
  3. Slice into roughly 12 pieces and roll into balls.
  4. Pour 1/2 cup of the coconut onto a clean piece of parchment paper and roll each ball in the coconut. You can also add some powdered sugar here to make the balls appear more white (totally optional).
  5. Pile coconut covered balls into a bowl and place plastic spiders on top. Spooky!

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
