Sticky Chia Date Pudding

 Sticky Date Chia Pudding with Toffee Sauce 

 This sticky date chia pudding is a creamy, high-fiber breakfast or snack made with blended Medjool dates for natural sweetness and gut-friendly nutrition. Naturally rich in fiber and antioxidants, Natural Delights® Medjool dates help support digestion and sustained energy while creating a smooth, caramel-like base for this nourishing pudding. Finished with a simple date-toffee sauce and yogurt, it’s an easy make-ahead recipe that feels indulgent but is built from wholesome ingredients.

Ingredients

  • Pudding
  • 5 Natural Delights Medjool dates, soaked in hot water for 10 minutes
  • 1½ cups whole milk
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • 6 tbsp chia seeds
  • Toffee Sauce
  • 2 tbsp almond butter
  • 2 tbsp date syrup

Preparation

Pudding

Drain dates and blend with milk, vanilla, and cinnamon until smooth.

Stir in chia seeds.

Let sit for 5 minutes, stir again (to prevent clumping).

Refrigerate for at least 2 hours or overnight until thickened.

Toffee Sauce

Warm almond butter for ~30 seconds.

Mix with date syrup until smooth.

Top chia pudding with yogurt + drizzle of toffee sauce.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
