Bananas Foster–Inspired High-Protein Breakfast with Medjool Dates

This Bananas Foster–inspired breakfast plate is a nourishing, feel-good way to start the day. Creamy whipped cottage cheese is topped with warm caramelized banana, naturally sweet Natural Delights® Medjool Dates, and a drizzle of nut butter for the perfect balance of protein, fiber, and natural carbs. Ingredients

  • ¾ cup cottage cheese
  • 1 large banana, sliced in half lengthwise
  • 1 tsp maple syrup
  • 2-3 Natural Delights Medjool Dates pitted, chopped
  • Nut butter, for drizzling
  • Sprinkle of cinnamon
  • Sprinkle of flaky sea salt.

Preparation

  1. Blend cottage cheese until creamy.
  2. Heat a medium skillet over medium-high heat. Add maple syrup and halved bananas. Caramelize on each side, ~1-2 minutes until golden brown.
  3. Spread blended cottage cheese onto a plate and top with caramelized banana, chopped dates, drizzle of nut butter, cinnamon, and flaky sea salt.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
