Protein Chocolate Date Truffles

These Protein Chocolate Date Truffles are rich, fudgy, and naturally sweetened with Medjool dates for the perfect healthy treat. Made with chocolate protein powder, cocoa, almond butter, walnuts, and coated in dark chocolate with a sprinkle of flaky sea salt, they're an easy no-bake snack packed with protein and wholesome ingredients.

Ingredients

  • For the truffles
  • 1½ cups Natural Delights pitted dates, soaked in hot water for 2 minutes and drained
  • ½ cup chocolate protein powder (or 1 scoop)
  • 2 tbsp cocoa powder
  • ⅛ cup almond butter
  • ¼ cup walnuts
  • Pinch of salt
  • For the chocolate coating
  • ½ cup sugar-free dark chocolate (or regular dark chocolate)
  • 1 tsp coconut oil

Preparation

  1. Soak the dates in hot water for 2 minutes, then drain well.
  2. Add the dates, protein powder, cocoa powder, almond butter, walnuts, and salt to a food processor. Blend until a sticky dough forms.
  3. Roll the mixture into bite-sized truffles. If the dough sticks to your hands, lightly coat your palms with a small amount of coconut oil to make rolling easier.
  4. Place the truffles on a parchment-lined plate or tray.
  5. In a microwave-safe bowl, melt the chocolate and coconut oil together until smooth.
  6. Dip each truffle into the melted chocolate or drizzle the chocolate over the top.
  7. Sprinkle with Maldon sea salt while the chocolate is still wet.
  8. Refrigerate for 15–20 minutes, or until the chocolate has set
  9. Store in an airtight container in the refrigerator for up to 1 week.

*While Medjool dates are high in natural sugars, they are low on the glycemic index thanks to a balanced amount of soluble fiber. The complex carbohydrates found in Medjool dates are digested at a slower rate, making them a source of dietary fiber and releasing energy to the body over a longer period of time.
